A study of more than 10,000 Chinese adults found that those who had the highest consumption of foods rich in monosodium glutamate had an almost 30% increased risk of becoming overweight compared with those who had the lowest intake of MSG-rich foods. Researchers reported in the American Journal of Clinical Nutrition that those who ate more MSG had higher production of leptin, which plays a role in appetite and metabolism regulation.
