Chefs are turning their attention to mayonnaise, creating artisanal variations with ingredients including smoked paprika, quail egg and caviar. A kitchen and store called Empire Mayonnaise, selling nothing but "luxury mayonnaise," is set to open in Brooklyn, N.Y., in November, and Wvrst, a "sausage hall" in Toronto, sells mayonnaise in flavors including maple rosemary and curry.
