Oleic acid and hydroxytyrosol, found in olive oil and omega-3 polyunsaturated fatty acids, may block the development of acute pancreatitis, Spanish researchers reported in a study of how ingredients in a Mediterranean-style diet affect cell damage. The report, partly published in the Proceedings of the Nutrition Society, said the healthy oils are linked to protection against inflammation and potentially could be used as functional ingredients.
