A New York district has developed a farm-to-school program that is now among the largest in the country. Janet Sklar, a nutritionist with the Bay Shore Union Free School District -- the architect of the program -- helped form a 45-school co-op in 2001. The schools purchase locally grown food, including potatoes. "I delight when seeing people, especially children, eating nourishing food," Sklar said.
