Portland's two-year obesity-prevention campaign is wrapping up, and city officials are touting its success in encouraging restaurants to label menus, installing salad bars in all public schools and developing a bicycle and pedestrian plan. Some of the grant money to fund the initiative was used to hire a nutritionist who worked with restaurants.
Brown rice is a great option for healthy meals for children, especially for schools that are required to add whole-grain items to menus by 2014. Doug Wordell, director of Nutrition Services for Spokane School District in Washington state, is already making the switch to brown rice in his schools. "Our Asian dishes and rice bowls have been very popular, especially vegetable and rice combinations," he said. "Students think they are great!"
