Burritos, taco salads, spaghetti sauces and other items in some Colorado schools now are made with local, grass-fed beef. While it is a more-expensive option, supporters of the farm-to-school trend say grass-fed beef, served in an estimated 12 districts in the state, includes no hormones or chemicals and may be healthier for students. Challenges include the cost and the need for adequate kitchen facilities and training for school nutrition professionals in cooking with raw meat, nutrition directors say.
