Researchers say they have confirmed mimics for res­veratrol, the anti-aging mechanism in red wine. The technique focuses on sirtuin enzymes that many scientists believe are activated by resveratrol only in the presence of fluorescent substrates. "We hypothesized that the fluorescent groups were substituting for something natural in the body," said David A. Sinclair of Harvard Medical School, whose team identified substrates that resemble fluorophores.
