As grocery stores morphed into ever-larger supermarkets, San Francisco's Bi-Rite Market took a different path, surviving during the '70s and '80s by meeting local demand for unhealthy snacks and fortified wines and transforming during the '90s under brothers Sam and Raphael Mogannam into a market boasting local produce, grass-fed beef and wines that are true to their nature. The retailer has grown from $2 million in sales in 1998 to $20 million last year, and Bi-Rite will open a second store this month.
