As more restaurants hop on the Meatless Monday bandwagon, a campaign encouraging diners to forgo meat just one day a week, sommeliers are creating wine pairings that will complement vegetable-based dishes, such as saké with tofu or Sherry with asparagus.
"In the end, wine and vegetables come from the same place," said Rob Dalzell, executive chef of The Ranch at Live Oak in Malibu, Calif. "If they grow together, they usually go together."
