Chef Jonathon Sawyer and his wife, Amelia, worked and lived in New York City for five years before moving back to Cleveland to raise a family, open Greenhouse Tavern and help transform the city's Rust Belt reputation. He's one of a growing number of chefs working to revive Rust Belt towns with local, sustainable and artisan food movements. "These cities have to be places where people want to live and work after graduation, and one of the things they want is good food," he said. "Otherwise, the brain drain to the coasts will just go on."
