Rising prices drove U.S. beef sales to $90.6 billion last year, up from $86.4 billion in 2011, despite declining volumes. Wholesale beef prices hit new record highs last week in advance of the Memorial Day weekend, and retail prices are forecast to rise to new all-time highs in the coming weeks, spurring consumers to say they'll switch to more affordable pork and poultry.
