New York City is considering an initiative that would follow other cities including Seattle and San Francisco in requiring restaurants to start composting their food waste, a move that many welcome while also acknowledging the extra time, space and resources they will need to comply. Some city eateries have a head start -- about 100 including Chipotle and Momofuku joined a pilot composting project in April, and some other chefs and restaurants have taken it upon themselves to make composting part of the operation.
