A new contraption, the Coravin, uses a small needle and argon gas to extract wine from bottles without opening them, allowing restaurants to offer better wine by the glass without worrying that oxygen will spoil the rest of the bottle's contents.
"It gives younger guests an opportunity to taste something that they might not have an opportunity to taste on their own," said Thomas Pastuszak, wine director at the NoMad in New York.
