More than 450 U.S. hospitals and food-service companies have taken the Healthy Food in Healthcare pledge, and their efforts to serve healthier fare have helped farmers and community programs that increase access to fresh produce for low-income residents. More than 20 hospitals in Michigan have farmers markets, and St. Joseph Mercy Ann Arbor Hospital has hired a farmer to help coordinate its program, which includes almost 20 acres of crops under production.
