Experts learn to notice subtle differences through experience, not evolutionary benefits. "With experience, some people can become more attuned to certain smells and tastes, which may lead them to like particular wines more, but their chemistry doesn't change," said Dr. Gary K. Beauchamp, director of the Monell Chemical Senses Center in Philadelphia.
