Modern British chefs whipping up dishes with ingredients such as wild mushrooms and imported spices and produce are creating feasts closely resembling what Romans ate more than 2,000 years ago, writes Michelle Warwicker.
"[The Romans] used a lot of smoking techniques and pickling techniques and curing ... and salting," said Gascoyne Place owner Marty Grant, who helped create a Roman Britain-inspired menu for the Great Bath Feast festival. "Obviously [they] used different ovens and urns to do that in but essentially the techniques are not a million miles from what we employ here in our kitchens."
